1 cup tomatoes cut into small pieces
2 tsp tamarind water
1/2 cup coconut milk
1/4 cup onions cut into small pieces
1/2 tsp green chilly cut into small pieces
1/2 tsp ginger cut into small pieces
2 tbspoon coconut oil
1/2 tsp mustard
1/4 tsp methi
Few curry leaves
Red chilly for seasoning
Salt to taste
Method:
Heat the oil in a kadai. Add mustard and red chilly.when mustard splutters add curry leaves, ginger, onion, methi, green chilly and sauté for few minutes.
Add tomatoes, tamarind water, salt and sauté for 5 minutes. Add the coconut milk. Sauté for 2 minutes and switch off the gas.
Serve the curry with chapathis
