- 2 cups cooked raw rice
- 2 cups curd
- 2 tbsp oil
- 1 tsp chana dal
- 1 tsp urad dal
- 1 tsp mustard
- 3 green chillies slit lengthwise
- 2 Brocken dried red chillies
- Salt to taste
- Few curry leaves
- 2 pinch hing
Method:
1. Take cooked raw rice in a big bowl. Mash the cooked rice a little. Add salt and curd into the rice and mix well to make it into a semi liquid state. Do not add cold curd to hot rice. Let the rice fully cool before mixing with curd.
2. Add 1/2 cup of pre boiled milk to the mashed rice. This keeps the curd rice fresh without becoming sour. Keep it aside.
3. Now heat a pan, pour oil, add red chilly, chana dal, urad dal, green chilly and sauté for few seconds. Add mustard, when it splutters add curry leaves and hing. Switch it off. Pour it into the curd rice. Mix well. Check the salt. As per your required taste, you may add more curd and mix well.

Tips:
For better result use freshly cooked & cooled rice.
Use only fresh curd.
