- 3 cup matured unripe jackfruit
- 1 cup grated coconut
- 3 garlic pods
- 2 green chilly
- 4-5 peppercorns
- Salt to taste
- Few curry leaves
- 2 tbsp Coconut oil
- 2 red dry chilly
Method:
1. Chop unripe jackfruit to medium size pieces. In a pan take four cups of water, add the jackfruit pieces, add salt and boil it. Switch off the flame when the jackfruit becomes tender and 3/4 cooked. Remove the excess water and keep it aside.
2. Now heat a pan, pour 2tbs oil, red chillies cut into 2 and mustard. When the mustard splutters add curry leaves. Pound green chilly, garlic, pepper and add it to the seasoning. On a low flame sauté for few seconds. Add coconut and the cooked jackfruit. Check the salt, if required add more as per taste. Mix well and switch off the flame.
It adds up as a good evening snack.
